Honey BBQ, lemon, peanut butter curry

I just want apologize for not finishing sandwich week. I literally made sandwiches for every meal of every day and I got sick of them. I also started school again so I have been super busy with that. Any ways I was looking at different things I had laying around (mostly looking at my spices). I had some chicken so I was going to make curry, bbq chicken sandwiches but this came out instead.

Ingredients:
1 lb. of chicken
1/4 cup lemon juice
1/4 BBQ sauce of choice (I used honey bbq sauce)
4 tablespoons each of curry powder, cumin, red pepper flakes and coriander
8 leaves of basil, chopped into ribbons
Half a sweet onion (love the Walla Walla onions here)
2 tablespoons of smooth peanut butter (yes it makes the dish delicious)

Recipe:
Step 1.
 Cut you chicken into long strips. Sort of like you are making broccoli and beef. More chopped up than the picture below.

Step 2. Add seasonings, bbq sauce and lemon juice and cover chicken for 2 hours to let the chicken absorb all the delicious flavor.

Step 3. After the chicken has gotten delicious, heat up a pan and put it in. Don’t dump any extra sauce from the bottom of the bowl, it will make it too soupy. Start the chicken on medium high heat. After a couple of minutes add the onion in. After cooking for another couple minutes, add the peanut butter and let it melt into the mixture. The peanut butter will thicken up the liquid as well.

Step 4. Add red pepper flakes to add a little heat, you can omit them if you want. They just add a nice little zing in this otherwise mild curry. Then cut up the basil and add it to the curry.

Step 5. Turn down the heat and let the mixture cook for 15 minutes. Serve over rice and enjoy.
