Beef stir fry with quinoa

I bought some assorted packages of meat (chicken, pork and beef) at the local grocery store and one of them was a beef package of “stir fry meat.” That’s where I got the inspiration for my meal. I’ve made stir fry many times in the past, and decided to use my hoisin garlic marinade on this meat, since it’s what I had on hand. Keep in mind that this is about 2-4 servings for me, when I am not stuffing myself full, and plan accordingly. This would also be good with fried egg or bacon in it. Here comes the recipe!

Ingredients:

One package of stir fry meat (I used beef that was pre-cut, about 1 pound)
Green onions
Red (or other) bell pepper
1/8 bag frozen peas and carrots
1/2 of an onion
3 cloves of garlic
Any other vegetables as desired
Sesame oil (for cooking)
Marinade (if desired, I used this)
Cooked quinoa (or rice)

Recipe:

1. Cook your quinoa or rice according to package instructions (1 cup quinoa to 2 cups water).

2. Chop all ingredients to desired size (meat and vegetables).

3. Heat your sesame oil in a pan and add your meat.

4. Flip your meat when the bottom starts to brown, to ensure even cooking.

5. Add your garlic and onions.

6. Add your frozen peas and carrots.

7. Add your chopped bell pepper and top it off with your green onions.

8. Cook thoroughly. Be sure not to overcook, or leave the meat too raw! It is a delicate balance. Then serve over your rice or quinoa and enjoy!

Grilled Pepperoni Pizzas

I had pizza three days in a row over the last weekend. And let me tell you, it was totally worth it. I’ve never endeavored into making pizza from scratch before, so I’m glad Colin was so enthusiastic about trying something new!

Ingredients:

2.5 cups of flour
1/2  Tablespoon sugar
1.2 Tablespoon salt
1 Teaspoon yeast
.875 cup water
1.5 Cups pizza sauce
1/4 cup chopped garlic
1/2 cup chopped onions
2/3 pound grated mozzarella cheese (or less…)
Pepperoni (or your preference of meat)
Spices for sauce: red pepper flakes, pepper,  dried cilantro, ground cayenne pepper
Your choice of toppings (we used garlic, pepperoni, mozzarella, mushrooms, you can add peppers, etc.) 


Recipe:

1. Mix the flour, salt, sugar and yeast together in a large bowl.

2. Add the water and oil and stir until dough forms a ball.

3. Wet your hand with water and work the dough into a smooth ball (IF DOUGH BECOMES STICKY, FLOUR HANDS AND BALL INSTEAD)

4. Let dough sit for about 15 minutes.

5. Place dough on floured surface and knead for about 5 minutes. Dough should be soft and no longer sticky.

6. Section off dough into 5 balls, roughly the same size.

7. Coat the dough balls in olive oil and place in tray. Let sit at room temp. for 30 minutes.

8. Cover with plastic wrap and place in fridge for 3 hours. Remove dough 90 minutes prior to when you want to cook.

9. Roll out dough with rolling pin to desired size/shape.

10. Sautee your veggies and prepare your cheese, etc.

11. Combine spices in sauce and mix.

12. Place dough on grill on medium heat till it is cooked on one side. Turn the heat down low before flipping.

13. Flip dough and cover in sauce, veggies, cheese, and other toppings.

14. Enjoy your pizzas! Repeat steps for additional grilled pizzas.

Bacon Pepperjack Macaroni & Cheese

Hello everyone!

Today I’m going to introduce my first recipe, the ultimate comfort food with a twist: bacon Pepperjack mac & cheese.

Ingredients:

1/2 cup Milk
A half cup or so of Pepperjack cheese (grated)
A few sprinkles of Parmesan cheese
A few tablespoons of Flour
1 box of Elbows Chifferi (or other noodles if you prefer, such as macaroni noodles)
4-6 strips of Bacon (depending on personal preference)
1 Pot
1 Pan
1 Baking/casserole dish
1 Cheese grater (or another method of grating cheese)

Recipe:

1.  Boil a few cups of water in a pot.

2.  When the water is boiling, add the noodles. Cook as directed on box and to desired softness. For firmer noodles, cook less, and for softer noodles, cook longer.

3. Drain the noodles and set aside.

4. Grate the Pepperjack cheese and set aside.

5. Using a pan, cook bacon to desired crispness and set aside.

6. Using a pot, on medium-low heat, add the milk.

7. While stirring, add the Pepperjack cheese and a few sprinkles of Parmesan cheese.

8. Depending on the consistency, add flour by the teaspoon until thick like cheese fondue.

9. Continue stirring sauce.

10. Add noodles to casserole dish.

11. Add sauce to casserole dish, over noodles.

12. Slice bacon into bite-size pieces.

13. Add bacon to casserole dish, over noodles.

14. Stir contents of casserole dish together.

15. Bake for 10-20 minutes at 350 degrees Fahrenheit.

16. Enjoy!
